Hubs' favorite lunch around here in the summer time is Cabbage and Noodles. Personally I am not a fan of cabbage dishes so I only make this for him but he loves it! Plus it is super easy to make. The surprising part of this dish is curry!
What you will need:
Medium head of cabbage shredded or diced to bite sized pieces
1 small onion
1 tablespoon butter
2-3 teaspoons Curry Powder
1 teaspoon Salt
2 teaspoons white ground pepper
1/4 Rice wine vinegar
I start by dicing the cucumber and onion and sauteing them in a pan with butter, just to get some pretty color on them. Then adding in cabbage, and let that begin to cook a bit before adding in the spices and rice wine vinegar. If the pan gets a bit too dry before the cabbage is fully wilted I add in just a bit of water to keep everything from sticking. Cabbage should be cooked but not loose its great color.
While all of this is cooking I have a pot of water set to boil and cook the egg noodles. Serving the pasta mixed in with the cabbage. This makes about 6 good sized servings.
